I have a pimento plant with at least half a dozen peppers (different sizes) but they're all still green. When do you pick these? Do you wait for them to turn red, or do they turn red once you pick them? Thanks! :)

You may pick them green, or allow them to turn red on the plant. I don't think they will redden after picking. Les

I picked green Serano's today, but leaving them on the plant they will turn red and be sweeter. Les

So pimentos can be eaten green? (Are they tasty like that?)

And interesting about the serranos -- I've only ever eaten green ones!

I don't really like any green peppers. Too bitter. I'd wait. Pimientos can turn red or any number of other colors. There are thousands of pepper varieties and I don't think any of them "stop" at the color green.

Actually, there is a variety of bell pepper that stays green. My reaction on reading that was, Why? I think it's a hybrid. But I still don't know why you would want to grow it. For green bells I just pick them before they turn red, yellow, orange or whatever.
